Made by brothers Ramón and Wilfredo García Sánchez, this batch of Espadín from fifty capón agaves was made during the cold months of November and December 2019. Fermentation times are often longer, and overall yields are substantially less than during hot, dry season. Following the celebrations that accompany Day of the Dead, the two brothers harvested only the quiotudo agaves that would have lost their sugars and become prone to insect attack had they waited for the warmer months of the following year. The family’s red earth parcel where this Espadín grew is co-planted with different agaves and the corn, beans, and squash crops that make up the milpa system.
