In the days surrounding the first full moon of 2021, Primitivo selected a small amount of ripe agave from three distinct parcels to compose this special field blend. Emblematic of the diversity and practices present in the region, Primitivo harvested more or less equal quantities of wild growing Tepextate, Coyote, Tobalá, Jabalín, and Bicuixe to craft this batch. The roasting and co-fermentation of different agaves is a historic staple of production and reflect both the terruño and the distillation traditions of Miahuatlán.
Carefully mixing the different cuts of heads, hearts, and high-proof tails, Primitivo composed a total of 70L. 84 bottles have been made available through our importer PM Spirits.
