Ensamble Tepextate, Bicuixe, Coyote | November 2021 | Hermanos García Vásquez | Spring 2022 Release | 48 bottles

This knockout production from Nicolás, Juan, and Eleazar García Vásquez - sons of the legendary Don Tomás - is a spectacular reflection of the biocultural traditions of Logoche and the Valley of Miahuatlán. The crafting of ensambles is part of a long-standing regional practice that reveals the complex flavors of the local landscape, bearing witness to the region and the skill of the craftsman.

The composition of this all wild agave ensamble, or field blend, included five Tepextate piñas, thirty Bicuixe piñas, and two very distinct morphological expressions of Coyote, a naturally occurring hybrid endemic to the region. The agave was harvested from the family’s La Mina parcel of rocky and nutrient-rich red soil, from a sloped stretch of feral land populated with different species of agave and cacti, copal and rabo de iguana trees.

One third of the batch stayed in Miahuatlán for local consumption, and the remaining 40 liters were selected for a bottling exclusive to The Maybourne Hotel. Only 48 bottles are in existence.
