Cuixe Verde (also known simply as Verde) is a very interesting and rare Agave karwinskii phenotype micro-endemic to the area in and around the village of San Luis Amatlán, Miahuatlán. There exist similar looking maguey with the same name around different parts of Miahuatlán, but the “true” Cuixe Verde is considered to be this very particular large, chunky, and deeply green-leaved type. It is also not to be confused with the Agave rhodacantha (Mexicano) Verde that comes from El Nanche and Mengoli.

Cándido and his son, Heriberto, selected a mix of 45 capón and en guía Cuixe Verde piñas from a cousin’s field in nearby Xitlapehua, harvesting a total of nearly 2,100 kg of maguey in May 2021. After a stretch of 12 days in the sabino wood fermentation vats, the liquid and fibers were distilled in June 2021 under the supervision and guidance of don Cándido. A total of 220 liters were composed with a careful mix of heads, hearts, and a select cut of high proof tails.
