Descending from two prolific mezcalero families, Simitrio is son of Cutberto Aquino and María García (sister of Tomás, Cándido, Celso, and Esteban García Cruz), and is an older brother to Gilberto. The two brothers, and their sister Florencia, assist in their father’s productions, but also craft a few of their own batches every year. In the midst of the rainy season of 2022, Simitrio harvested a small amount of five different types of agave from a rocky white parcel of family, to create this small volume but big-flavored field blend.

These ensambles made from both wild and cultivated agave types are highly reflective of the agrarian and gastronomic traditions of Miahuatlán, where the milpa is often planted along with cultivated agave, adjacent to an abundance of different wild magueyes and native vegetation. Simitrio used only about 500kg of maguey to make these 30 liters, and employed a nearly equal mix of Bicuixe, Tobalá, Espadín, and Madrecuixe. Approximately 80kg from three piñas of quiotudo Coyote was added, lending an extra tone of distinctly miahuateco minerality and brightness.
