Extremely aromatic and robust in its texture and flavors, this field blend from Manuel Aquino is an emblematic expression of the terruño of the region and the craftsmanship of the family. Harvesting wild grown and six months to one-year capón agaves from white and rocky ravines, Manuel selected an even mix of Coyote and the saponin-rich Jabalín for the production of this 40L batch. Cooked alongside a multitude of other maguey, approximately 450kg was separated and rested for seven days before maceration. In response to the chilly November temperatures, the dry fibers required 48 hours before they were ready for water. 550L of well water was added and after through mixing, the mash was left to ferment for an additional six days before the maestro deemed the guarape ready for distillation.

While making his cuts in the second round of distillation, Manuel set aside the low ABV liquid for future refining, and composed this production with a mix of heads and hearts, settling on a cordón cerrado that corresponds with 49.2% Alc by Vol.
