The region of Miahuatlán, in southern Oaxaca, boasts the greatest diversity of agave varieties used for mezcal production. Over millennia, the people of this region have cultivated and selected different types of agave, often finding "new" varieties within their own micro-regions. This small batch was crafted from seven cultivated piñas of Agave karwinskii, known locally as "Tripón," a rare variety unique to Santa Cruz.
These massive plants can grow over 2 meters tall and weigh more than 200kg. Miguel García Ortíz, son of maestro Nicolás García Vásquez, harvested these piñas with the help of his grandfather, Don Tomás, who had nurtured them since acquiring mother plants in 2022. After roasting the maguey for eight days, Miguel rested the piñas for a week before crushing them using a tractor-drawn stone mill. Fermentation lasted nine days, and despite an early distillation, this batch yielded 55 liters of mezcal. Selected exclusively by Maverick Beverage Co. in Arizona, this production offers an unparalleled expression of this rare agave.
