The two rare and distinct local varietes of Agave americana used in the production of this batch were sprouted from seed by don Tomás and sons in 2014 and sold to a family in Ejutla the following year as small plantlets. Planted in a white and rocky limestone terrain and cultivated with great care, these magueyes matured in just eight years and were harvested six months after the cutting of their flowering stalks in October 2022. Despite having their own palenque at their ranch in Ejutla, the family returned their harvest to Logoche out of their preference for craftsmanship of don Tomás and his sons- an anecdote the maestro tells with great pride. Distilled in November 2022 and composed with a careful mix of heads, hearts, and a high proof cut of tails in January 2023, a total of 560 liters were produced and split a medias between the growers and the producers. This traditional chain of production has been greatly interrupted in recent years but remains essential to the socio-cultural and economic sustainability of many producing regions throughout Mexico. Roughly 80 liters were sold on the local market, with the additional 200L set aside for this special NETA release through PM Spirits.
