Rayo (Agave Americana var.)
The maguey Rayo looks very similar to other A. americana types in the region, such as the Arroqueño and Sierrudo, but expresses slightly different morphology in both the penca (leaf) and the black colored espinas (spines). The differences between these very similar agaves becomes extremely apparent when one eats the cooked agave, which reveals a unique flavor profile. This unique cultivar is endemic to the region surrounding Logoche but has nearly gone extinct in the last half century. Primitivo Vásquez Vásquez is currently the only producer we work with who is cultivating this rare A. americana cultivar.
