Manuel started the year off with this ensamble of five different types of maguey that combines homegrown Madrecuixe and Espadín with three different species of wild agave. It is a wonderful reflection of the land, the plants, and the craftsmen. Manuel began to harvest the agave after the first full moon of 2020, collecting a total of six piñas of Madrecuixe quiotudo, four piñas of Tepextate quiotudo, five Espadín de guía, 10 Bicuixe quiotudo, and two piñas of Jabalín en guía. Despite being Tepextate and Madrecuixe heavy by weight, the Jabalín, as per usual, is very present in the aromas and flavors of the spirit. Assisting in nearly every step of the production was his wife, Anastacia. Distillation was done over the first week of February, and with a careful mix of heads, hearts, and tails, Manuel composed a total of 80 liters.
