With the arrival of the first full moon of March 2017, Cándido and family set out to harvest a mix of different magueyes, both cultivated and wild-growing on a chunk of family land known as La Mina. This (wild) Tobalá dominant ensamble was worked and carefully processed during the following weeks before being distilled in late April 2017. The wild grown Coyote is a natural hybrid of the Tobalá and Madrecuixe of the region – the product of shared pollinators and overlapping flowering times - and thrives in the rocky and sandy hillsides and ravines in the area surrounding Logoche. Quite rare, it typically grows near Tobalá and has long been mixed together for the crafting of spirits in the region. Since the latter half of the 20th Century, it has become commonplace in Miahuatlán to mix Madrecuixe, Bicuixe, and Espadín together in various proportions, so it was a logical choice for Don Cándido to include these three agaves to concoct this unique batch.
