In uncorking this bottle, the signature aromas of its maker are immediately identifiable. Made alongside the same March 2013 batch of Madrecuixe capón that has also been selected by PM Spirits, this wild Bicuixe is another incredible demonstration of the skills of maestro palenquero Cándido García Cruz. Harvested from his Mina parcel of rocky, red, cascajudo earth, the flavors and aromas are particularly telling of this specific terrain, as expressed through the water, yeast, and micro-organisms of his palenque. Cándido’s mastery of every step of the production process from the selection of ripe agave for harvest, right through distillation and the spirit’s final composition, is irrefutable. Perfectly roasted and fermented, Cándido captured the essence of the maguey and created a stellar presentation of Bicuixe, honoring the intimate relationship between people and plants. This release is some of the last of the older productions from Cándido García Cruz and was made help from the family and with the use of a molino de piedra, drawn by the family’s criollo bulls.
