For those already familiar with the work of Don Cándido, the flavors and aromas of this Madrecuixe will be recognizable as quintessential expressions of his craftsmanship and of the land from which these agaves were harvested and then processed. For others, this batch will be a wonderful introduction. Distilled with help from his daughter, Florencia, in March 2013 alongside a similar quantity of Bicuixe, this had been aging for nearly nine years before it was bottled in Logoche in the winter of 2021. For this batch, Cándido estimates that around 25 piñas were harvested from his stretch of the La Mina parcel of nutrient-rich rocky, red cascajudo earth. It is this land to which he attributes the specific flavor profile of many of his productions. All three batches selected by PM Spirits, MDXCAN1303, BCXCAN1303, and ENN1705, were made with different agaves harvested from La Mina and offer a fascinating glimpse into a very specific parcel, as understood and interpreted by a family of master palenqueros.
