A stellar reflection of the lands and practices of the region, this batch has been selected as a special pick to be shared between our distribution partners in California, Massachusetts, and Texas.

In accordance with an age-old practice, don Celedonio harvests ripe maguey in days surrounding the full moons of the dry season, cooking only one or two ovens of agave every year. Having already selected and cut the flowering stalks of approximately 300 wild Bicuixe plants, the maestro returned to two separate parcels of family land in May 2022 to harvest the ripe maguey designated for this batch. The profound depth to the aromas and flavors found in this batch are reflective of the two-year capón time of the Bicuixe, the rocky and red earth from which they came, and the skill of the craftsman; it is a truly quintessential expression of the terruño of Logoche, Miahuatlán.
